I love cooked okra and I am very happy that I am finally sharing the recipe with you guys. 

Okra also known as delele, is a very popular traditional dish in Zambia, and the truth is that it's every child's favorite, of course it's eaten with nshima, and the reality is that even if you have no appetite for nshima( also known as pap) you'll still want to eat it once you see delele. Boiled okra makes nshima slide very fast hence it's very good for sick people with difficulties in eating pap.

Because it's an accompaniment to nshima, we mostly refer to it as okra soup. 

By the way nshima is a traditional Zambian meal prepared with maize meal, the maize meal porridge is cooked til  hard. 

"Delele is a Zimbabwean, Zambian, north-eastern Botswana and Northern South African dish made from a local plant of the same name, and often eaten with sadza or phaletšhe or Vhuswa. The English word for delele is Okra.[1] Okra is also referred to as "derere".[1][2] It is prepared with baking soda and well known for its slimy texture. Delele can be dried before cooking, but more frequently it is cooked fresh.[citation needed]

The Vha-Venda people of South Africa cook the leaves of Corchorus olitorius in a similar manner. The dish goes well with Vhuswa (pap or maize meal)"

How to cook okra with soda
         Total Time: 20 Min       Serving: 3

Ingredients

  •   

    • ▢ 1 large tomato
    • ▢ 1 packet of Okra or 30 individual Okras
    • ▢ 1 teaspoon of salt
    • ▢ 1 teaspoon of soda or bicarbonate of Soda
    • ▢ 1 cup of water

Instructions 

  1. Dice the tomato
  2. Remove the stems and bottoms off okra
  3. In a medium pot, add water, salt and soda. Bring to boil. Add tomato and boil for 3 minutes, add okra.
  4. Leave to boil while whisking the pot occasionally as it cooks. The cooking stick is used to make sure there is no spill over as the okra become frothy, not to actually stir the okra continuous as it may be mashed, we want the chunks intact.
  5. When okra overflows, it is cooked.
