Chocolate Fudge Cake With Chocolate Ganache This is an easy yet the best chocolate fudge cake recipe. Filled and frosted with chocolate ganache . This chocolate cake is tender, moist and it's very satisfying.

This is my favorite homemade chocolate cake recipe, with time it will soon become your favorite recipe too.

Chocolate Cake isn't an ordinary cake, once you mess up, everything goes bad. The reality is, a good chocolate cake is hard to come by. I have tried many cake recipes but the majority of them didn't give me the satisfactory I  wanted, the results made me avoid baking chocolate cakes - but with time and a lot of adjustments I finally settled with this recipe, the results are just amazing. Photos don't lie y'all, this cake is just as good as it looks.

Chocolate Fudge Cake Ingredients 

I used simple to find but perfect Ingredients.
For this recipe.

  • White granulated sugar
  • unsweetened cocoa powder
  • baking powder
  • vegetable oil
  • pure vanilla extract
  • milk
  • instant coffee powder
  • heavy cream
  • dark chocolate chips
Flour: Just like with my many chocolate cake recipes I went for all purpose flour.

Sugar: White granulated sugar or you can use natural graduated baking sweetener. 

Cocoa powder: A teaspoon of unsweetened cocoa powder.

Baking powder: 2 teaspoons of baking powder. If I had used both baking powder and baking soda then I would have added a teaspoon of baking powder and a teaspoon of baking soda.

Salt: Salt adds to the flavour. I added a teaspoon of salt.

Oil: I always used oil in my chocolate cakes because of how drying cocoa powder is.

Eggs: 2 eggs at room temperature.
Vanilla extract: What's a chocolate cake recipe without that vanilla flavour?

Milk: I always used full cream milk in most of my cake recipes but other bakers prefer using buttercream.

Water: It's a custom that you use hot water in your chocolate cake. There are no two ways about it.

Coffee powder: I added 2 teaspoons of instant coffee powder.

Heavy cream & Chocolate chips: The heavy cream and chocolate chips is for the ganache.

How to make Chocolate Fudge Cake

Instructions:

  1. In a large mixing bowl, mix flour, sugar, cocoa powder, baking powder and salt. Whisk thoroughly til combined. 
  2. In a separate bowl mix eggs, vegetable oil, and vanilla extract. Mix til smooth. Add wet ingredients to your flour mixture and mix.
  3. Heat a cup of water on the stove or using an electrical kettle. Add 2 teaspoons of instant coffee powder to a cup of hot water. Mix til a perfect coffee is formed.
  4. Pour the coffee into the flour mixture and mix til smooth and glossy.
  5. Lightly grease an 8 inch round cake pan with non-stick cooking oil spray or grease with cooking oil.
  6. Pour the cake batter into the prepared pan. Bake at 180 degrees Celsius for 45 minutes.
  7. Insert a toothpick in the middle of the cake. When your cake is ready your toothpick will come out semi-clean with small amount of cake (not runny batter).
  8. Remove the cake from the oven once it's ready. Allow to cool for 20 minutes. Transfer your cake from the pan to a wire rank, let it cool completely before frosting.

What Is Chocolate Ganache?
Chocolate ganache is a mixture of cream and chocolate. The cream is heat then poured over the chocolate or the chocolate is put in the heated cream. The two ingredients are stirred until smooth.


Chocolate Ganache Uses
Ganache can be used as a filling for pastries or cakes, truffles, drizzle over ice creams


How To Make Chocolate Ganache
Made with just two ingredients, this chocolate ganache recipe is very simple to put together.

  1. Pour heavy cream into a small saucepan and heat on low heat for a few minutes.once the cream is hot, turn off the stove and take the sauce pan off the heat.
  2. Add in the chocolate chips. Cover the saucepan with a lid and let it sir for 5 minutes to soften the chocolate.
  3. Uncover and stir slowly with a spatula or a wooden spoon gradually mixing faster until the ganache is smooth, creamy and glossy.
  4. Refrigerate for an hour until thick enough to spread evenly over the cake.
How to store Chocolate Ganache.
Store in a airtight container and refrigerate for up to one month. Freeze for up to two months.

INGREDIENTS

  • 2 Cups milk
  • 1 Cup boiled water
  • 2 Teaspoons instant powder
Chocolate Ganache Recipe:
  • 1 Cup heavy cream
  • 250g semi-sweet or dark chocolate chips

METHOD

    Prepare Chocolate Ganache:

    Assemble Cake:
    1. Remove chocolate ganache from the fridge and spread chocolate ganache on cake using a offset spatula. Use a star shaped nozzle to make the flower decoration.
