Lumanda In Pounded Groundnuts: This is a very popular vegetable in Zambia, lumanda has a sour taste, this taste contributes to it's deliciousness when cooked with powdered groundnuts.

Lumanda in English is known as hibiscus sadbiriffa. Lumanda is either cooked with powdered groundnuts or it's cooked with cooking oil, it should also be noted that lumanda with cooking oil is very sour, because of this, I only prepare it with pounded groundnuts. 


Although this recipe is about lumanda with pounded groundnuts, I will also share ways of how to prepare lumanda with cooking oil

HOW TO COOK LUMANDA WITH GROUNDNUTS

Separating lumanda from the stem: Remove the  leaves from the stems and wash. I usually press my thumb nail and my index finger nail together.

Boiling Lumanda: Add lumanda in a pot with 3/4 teaspoon soda and 1 cup of water. Boil for 5 minutes

Adding Powdered groundnuts. Add chopped tomatoes and the powdered groundnuts and begin to stir continuously

Continue stirring for at least 20 minutes to ensure the powdered groundnuts are fully cooked

Lumanda is ready once it starts looking brownish. If your lumanda is still looking greenish then you can try to add more soda.

How to cook lumanda with soda

HOW TO COOK LUMANDA WITH COOKING OIL

1. Remove the  leaves from the stems and wash

2. Add the cooking oil in the pot

3. Add the chopped tomato and  begin to stir continuously for about 2 minutes

4. Add the leaves and continue stirring for just about 5-7 minutes

5 . It is now ready to serve

    • ▢ Lumanda 
    • ▢ 1 tomato, chopped
    • ▢ 1 cup groundnuts, powdered
    • ▢ 3/4 teaspoons soda
    • ▢ 1 teaspoon salt
    • ▢ 1 cup water

Instructions 

  1. Remove the  leaves from the stems and wash.
  2. Add in the pot with ¾ teaspoon soda and 1 cup of water. Boil for 3 minutes
  3. Add the chopped tomato and the pounded groundnuts and begin to stir continuously
  4. Continue stirring for at least 20  minutes to ensure that the groundnuts are fully cooked 
  5. It's ready the moment it begins to look brownish.

Notes

1. Serve hot or cold with Nshima.
2. Lumanda is ready once it starts looking brownish. If your lumanda is still looking greenish then you can try to add more soda.
