I know a lot of people don't do a lot of frying in the kitchen, they prepare roasting and baking their food. My son and I absolutely love french fries, everytime I buy potatoes, he asks me if I can make him fried chips, although I know they are not healthy, I do fry him some chips, good thing I don't buy potatoes a lot, and when I buy potatoes more than 3 times a week, I opt for potato wedges.

HOW DO YOU CUT POTATOES INTO WEDGES?

Start by scrubbing your potatoes until all the dirty is removed. Potatoes must be cleaned regardless of whether they look clean or not. 

Peel potatoes. I do not like eating unpeeled potatoes, but if you love them with their skins on then cut them without removing the skin.

Slice each potato in half lengthwise. Cut each half in half again lengthwise to make quarters, slice those quarters into eights.

HOW DO YOU MAKE POTATO WEDGES?.

After slicing all your potato wedges, it's now time to coat them with flavor. I use a blend of olive oil, black pepper, white pepper, curry powder, and braai and grill seasoning. Put your potatoes in a large bowl, add olive oil and seasonings and hands toss the wedges until well coated. 

Bake potatoes at 425°F for 30 to 40 minutes or until browned and crispy. Add a sprinkling of parsley.

WHAT TYPE OF POTATOES ARE BEST FOR POTATO WEDGES?

For crisp wedges that fluffy on the inside, choose russets, Yukon gold or red potatoes. 

Your wedges can be peeled or unpeeled. 

Tip

I didn't add salt to the potatoes because Braai and grill seasoning already has salt.

You can serve these wedges with any dipping sauce of your choice. Some great dipping sauce are:

Tartar sauce

Chipotle ranch dressing

Blue cheese dressing with mayo 

Ketchup 

They taste delicious with a sprinkle of Parmesan cheese.

    • ▢  2 Large Potatoes
    • ▢  2 tablespoons of olive oil
    • ▢  1 tablespoon of braai and grill seasoning 
    • ▢ 1 teaspoon white pepper
    • ▢  1 teaspoon black pepper
    • ▢  1 tablespoon curry powder
    • ▢  1 teaspoon mixed herbs 
    • ▢  Parsley

Instructions 

  1. Preheat the oven to 425°F.
  2. In a large mixing bowl, toss potatoes with olive oil, black pepper, white pepper, curry powder, mixed herb, curry powder and braai and grill seasoning.
  3. Hand toss until well coated and spread evenly on the casserole dish. 
  4. Roast for 30 to 40 minutes, or until tender and golden brown around the edges, flipping the potatoes in the oven around the 15 minute mark. The timing will depend on the size of your potatoes.
  5. Sprinkle with the parsley and serve with desired dipping sauces.

Notes

1. If using a baking tray then line it with a parchment paper so that the potatoes don't stick2. I didn't use salt because braai spice contains salt.
