Stuffed Pumpkin Recipe This mushroom stuffed pumpkin recipe is perfect as a main course or a side dish for a delicious main course. If you are a vegetarian then this is the perfect recipe for you. I don't always post vegetarian recipe, so every time I cook something for vegetarians my heart gets excited. Believe me this stuffed pumpkin makes chicken stew, beef stew hide in shame.. Wait maybe am exaggerating 🤣 . 

I never imagined in my wildest dreams that I would make something like this, I thought it was time consuming, and the though of having to Bake then start opening the pumpkin just made me feel lazy.. But the moment I put my mind and heart to making this recipe, I realised that it was actually fun and easy to make. Do not be intimidated by the look of this delicious stuffed pumpkin, believe me it's super easy to make, and you'll enjoy it.

VARIATIONS

This vegetable stuffed pumpkin recipe is specifically for my vegans and vegetarians friends, of course even us who are neither vegans nor vegetarians. The recipe only has vegetables  but if you want meaty variation then you can simply substitute vegetables for sausage, chicken or meat. You can also have a mixture of vegetables and meat, vegetables and chicken, vegetables and sausage etc. But this is the perfect stuffing if you want to eat gluten.

stuffed pumpkin will make your Halloween or Thanksgiving complete. The reality is that you do not need to be a vegetarian to love this roasted stuffed pumpkin.

Stuffed Pumpkin Ingredients

• Pumpkin
• Dry Mushrooms
• Peanut Butter
• Green Pepper
• Red Pepper
• Yellow Pepper
• Red Pepper
• Carrot
• Red Onion
• White Onion
• Tomatoes
• Green Beans
• Vegetable Cooking Oil
• Garlic Powder
• Salt

You can substitute these fruits with any fruits of your choice or you can remove whatever you don't want to use.

USING PEANUT BUTTER

I wanted to go extra miles by adding peanut butter in this stuffed pumpkin so I had to go for dry mushrooms. I added peanut butter to the mushrooms.
The peanut butter mushrooms gave the pumpkin a strong rich nutty flavour.

How TO MAKE STUFFED PUMPKIN


1. Put the whole pumpkin on a baking pan and bake it in the oven for 50 minutes at 180 degrees Celsius. Your pumpkin could take longer or less time to bake depending on the size of the pumpkin.

2. While the pumpkin is baking, wash the dry mushrooms thoroughly to remove sand. Add the mushrooms in the pot, add salt and water then cook on the stove for 30 minutes on high heat. After 30 minutes add tomato, onion and salt. Cover the pot with a lid then continue to cook for another 20 minutes. once the tomatoes are ready add peanut butter. Reduce the stove to medium and cook for another 20 minutes. Remove the lid from the pot and let your mushroom simmer for 10 minutes.

3.ngitudinal slices of yellow pepper, red Pepper, green pepper,onion and carrot. Set aside. 

4. Add a medium pan on the stove then add little oil. Add the vegetables you had cut earlier. Add 1 tablespoon of garlic powder and a handful of green beans (uncut but the heads removed) fry til crispy. Add salt and black Pepper to taste.

5. Mix your fried vegetables to your peanut butter mushroom, stir using a wooden spoon. Set aside. 

6. Your whole pumpkin is ready by now. Make a round opening with a knife at the top of your pumpkin. If you are not sure of how to get an accurate round cut then use a small round saucer or plate,put a round plate on top of your pumpkin and cut using a knife.

7. Gently remove and scoop out the pumpkin seeds using a tablespoon. Add vegetable filling in the pumpkin.

INGREDIENTS

  • 1 Green pepper

       1.This Recipe can easily be doubled or tripled.

       2.Instead of getting a larger pumpkin use multiple pumpkins.
