Chicken And Bacon Pasta Bake - This  chicken bacon potato pasta bake is a family's favorite. Made with cooked pasta, cooked potatoes, chicken and bacon and mixed with 3 different types of cheese - Knorr cheese sauce, mozzarella cheese and cheddar cheese. This cheesy pasta bake with chicken and bacon is more than capable of satisfying a family. Let me also mention that it makes great leftovers too. This bacon pasta bake with chicken and potatoes doesn't need salads to compliment it, it's delicious, easy and quick to make. I call it chicken and bacon pasta bake but it's more of a chicken and bacon pasta casserole, it's baked in a Casserole dish with a lot of potatoes( cheesy potatoes).

You can throw different types of vegetables in this chicken pasta casserole and the meal will still remain mouthwatering. Even non vegetable lovers will appreciate this pasta bake.
I was tempted to add mushrooms to this chicken pasta bake but I was afraid that the mushrooms were going to kill the taste of potatoes.

You know this recipe just happened. I didn't know what to prepare for dinner. I looked in the fridge and I thought of cooking chicken and potatoes but at the last minute I just thought of mixing everything, that's how this Pasta Bake Recipe came about. The results?  Amazing!!!.

Wait! I also mix ingredients then the results turn out to be a disaster 😂 I once cooked a meal but ended up not eating it, the meal stayed in the refrigerator til I decided to throw it away.
It's called expectations vs reality.
But thank God for the meals that turned out delicious.

WHAT'S THE DIFFERENCE BETWEEN A CASSEROLE AND A BAKE?
Casserole: Something made in a Casserole dish.something creamy or perhaps saucy and it's always cheesy.

Bake: Anything made in an oven.
I don't know whether to call this meal a Chicken and Bacon Pasta Bake or Chicken and Bacon Pasta Casserole. It's pretty much Casserole but I'll stick to Bake.

HOW TO MAKE CHICKEN AND BACON PASTA BAKE

This meal will be done in less than an hour.

Chicken And Bacon Pasta Bake Ingredients
• Chicken: I used Chicken breast, but you use boneless Chicken thighs
Half a packet of bacon:
• Pasta: I used elbow macaroni, but any kind of short shaped pasta will work just fine. Cook the pasta according to the instructions on the packet.
• Potatoes
• Spring Onion
• Garlic
• Garlic and herbs spice:
• Chicken Spice
• Salt and Pepper
• Cheddar Cheese
• Mozzarella Cheese
• Knorr Cheese Sauce

Instructions:
Prep time: 20 Minutes 
Cook time: 40 Minutes 
Total time: 1 Hour

1.Put the pasta in a pot, add a cup of water, salt and a teaspoon of oil then bring to boil. Boil until cooked but the pasta should be firm to the bite.Cut the Chicken breast into cubes using a chopping board and a kitchen knife. Season with garlic and herb spice, Chicken spice, salt and paper.

2.Fry on medium heat using a sauce pan. As it starts to brown add in some diced bacon and chopped garlic then fry until the chicken pieces are light brown. Add a sachet of tomato paste( I used garlic flavoured tomato paste). Add the pasta to the Chicken and bacon, mix well using a spatula.

3. Clean and peel 4 medium potatoes and slice them into 1 inch size. Season with salt and bring to boil for 5 minutes, then drain the excess water and line the potatoes at the base of the Casserole dish.

4.Top with some pasta mix and add a handful of grated cheddar and mozzarella cheese. Add in some Cheese and sauce then top with additional pasta mix. Top with the left over potato and Cheese sauce then add a sprinkle of spring onion and a handful of cheese.

5.Cover with a foil paper and bake for 20 minutes at 180°. Serve warm.

Refrigerator: Store in an airtight container for 3 days.
