WHAT IS CASSAVA?

Cassava is a tuber or root vegetable grown in many parts of the world including Africa and south america. Cassava is one of many healthy vegetables that are rich on carbs and calories.
Cassava is called by different names but not limiting to Brazilian arrowroot, manioc, yuca, tute etc.

Cassava root is eaten cooked and raw. A fresh cassava root is delicious when eaten raw. Other people do consume raw dry cassava, consuming dry cassava root is not poisonous but it can cause choking.
Cassava can be grounded or grated to make flour or to make cassava meal.

Cassava meal is very healthy especially to people who suffer from diabetes or high blood pressure. The meal is used to make nshima(pap). Cassava meal can be mixed with maize meal to cook nshima.

Cassava root is also good for people who suffer from allergies because it is grain-free and gluten-free.

Even though yuca is high in carbs and calories, it is low glycemic, this makes it even more delicious.

Just like with potatoes cassava aka yuca can be boiled, baked or fried.

Cassava can not replace potatoes in most recipes but it is surely a great replacement when it comes to fries.

DO YOU PEEL CASSAVA/YUCA BEFORE COOKING?

Yes! Unlike potatoes and sweet potatoes which can be baked, cooked and fried with it's skins, yuca can not be fried with it's skin because the peels are extremely toxic. Cassava is similar to yum, they look alike but they have a different taste. Though they are both delicious and super healthy.

HOW TO MAKE YUCA FRIES

Yuca fries recipe is very easy, you'll adopt it as your main fries recipe.

Step by Step

  1. Using a kitchen knife, remove all the skins from the yuca roots and slice them into fries.

  2. Put your yuca fries in a large pit of water, add 2 tablespoons of salt ( the amount of salt will depend with the amount of water you'll use and how much fries you are cooking). Boil them for 20 minutes or til they are tender.

  3.  Remove the fries from the pot and put them on a colander. Allow the fries to air dry for 10 minutes.

  4.  Add 1 cup of cooking oil on an iron cast pan . fry the yuca fries for 3 minutes on each side until golden brown.

NOTICE:

  1. poke a sharp knife in the cassava to know if they are ready when boiling.

  2. Do not over crowd the pan otherwise some of your fries will just consume cooking oil without being crispy. Each fry should be touching the pan for that crispiness.
I like to sprinkle my cassava fries with just salt, but you can also sprinkle some pepper.
You can also serve them with some dipping sauce.
