This is my go to a simple chocolate cake recipe, well unless if I want a chocolate fudge cake.  Covered with chocolate cream cheese frosting, orange cream frosting and green frosting, you'll love how fun it is to make and decorate this chocolate cake. I know it probably looks intimidating because of the different color decoration, but believe me, it's as easy as decorating it with just one color. One thing I love about this 3 color decor is that it makes a simple cake look all fancy and intimidating.

Growing up, I was more of a vanilla cake lover than a chocolate fan simply because all the store bought chocolate cakes I tasted had a lot of cocoa which made the cakes taste bitter but now that I know how to bake, chocolate cake has become my favorite.

The first time I baked a chocolate cake I was excited but after I was done I was sceptic about tasting it, something in me told me I was going to be disappointed but after many minutes of looking at it, I gained strength and decided to taste it.. It wasn't as great as the cakes I make now but it wasn't bad. I mean everyone finished their slices but I got told " you'll soon learn" haha 😑 what a supportive family. 

I continued baking, with time I learnt to bake well and now they tell me to open my own restaurant 🤭


CHOCOLATE CAKE INGREDIENTS

Flour: Use all-purpose flour. I know the desire to use cake flour when making cakes but cake flour doesn't go well with cocoa powder.

Milk: I used warm milk. If you want you can substitute it with buttercream.

Unsweetened natural Cocoa Powder: I used nestle cocoa powder because it enhances the chocolate flavor. My cake has a deep dark chocolate color yet it doesn't taste like coffee. You can add espresso powder to your cocoa powder for a deeper dark chocolate cake.

Baking powder and baking soda: both baking soda and baking powder are used in this recipe to ensure it rises enough. 

Oil: Oil is used to ensure the cake has enough moist. Cocoa powder makes cake dry so using butter will yield a dry chocolate cake, but our aim is to have a soft moist cake, so using oil is essential for this recipe. 

Coffee: Hot coffee is a winner in this recipe. It enhances the cocoa powder flavor. The hot coffee helps cocoa powder to dissolve properly and quick. 

Eggs: Make sure your eggs are at room temperature before you start baking. 

Vanilla essence: Adds vanilla flavor.

Salt: Salt balances the flavor.

How to make ahead and store the Cake and Frosting

The cake and the frosting can both be made ahead of time.

Allow the chocolate cake to cool. Wrap it well in a plastic wrap and put in a ziplock freezer bag.Freeze for up to a month.

Storing The Frosting

Store the frosting in a freezer for up to three months and in the fridge for up to two weeks.

FAQs 

Can I use this recipe to make cupcakes?

Yes. You can use the same exactly recipe to make cupcakes. Just decrease the baking time.

Can I use Buttermilk instead of milk?.

Of course. I didn't use buttermilk because I didn't see the need to but a lot of bakers prefer buttermilk to milk.

You can buy buttermilk from your nearest store or you can simply make it.

  •  VANILLA BUTTERCREAM   FROSTING  


    • ▢ 1 Cup milk
    • ▢ 5 tablespoons flour
    • ▢ 100g butter
    •  1 ½ Icing sugar
    • ▢ 1 tablespoon vanilla extract

     CHOCOLATE FROSTING 
          ▢ 120g chocolate whipping cream
           130ml milk

     ORANGE AND GREEN FROSTING
          ▢ 250ml milk
           250 strawberry flavored whipping cream
           1 tablespoon green food color
            1 tablespoon red food color

 

Instructions 


Preheat oven to 350°F.
Add a 6 inch parchment paper to the bottom of a 6 inch cake pan. Set aside. 

BATTER:

  1. Using a mesh strainer sieve flour, cocoa powder, baking powder and bicarbonate of soda.
  2. In a large mixing bowl, blend all-purpose flour, castor sugar, unsweetened cocoa powder, baking soda, baking powder and salt. Set aside.
  3. In a separate medium-size mixing bowl, whisk together the eggs, milk, vegetable oil, vanilla extract, and hot water dissolved with a tablespoon of cocoa powder. 
  4. Add dry ingredients to the wet ingredients and whisk together until combined. Do not over mix the cake batter. 
  5. Pour the cake batter into the prepared cake pan and bake for 30 minutes at 350°F or until a toothpick inserted comes out clean. 
  6. Let the cake cool for 10 minutes before moving it onto a wire cooling rack to cool completely.
  7. Once cooled, frost with  cream cheese frosting. 

 CREAM CHEESE FROSTING:

  1. On low heat, boil 1 cup of milk in a sauce pan then add 5 tablespoons of flour. Whisk using a small cooking stick til everything is well incorporated.
  2. Remove from the stove once the mixture is creamy and let it cool.
  3. Mix icing sugar and butter. Whisk til fluffy. Add vanilla extract and continue to whisk. Add flour paste. Beat until well blended, fluffy and light.
 CHOCOLATE FROSTING
  1. Warm milk in a microwave or on the stove using a sauce pan. 
  2. Transfer milk to a mixing bowl once it's warm. Using a handheld mixer beat 125g of chocolate whipping cream and warm milk for 4 minutes.

 ORANGE AND GREEN FROSTING
  1. Warm 250ml of milk in a microwave or on the stove using a sauce pan.
  2. Transfer milk to a mixing bowl once it's warm. Using a handheld mixer beat 250g of strawberry flavored whipping cream and milk for 4 minutes.
  3. Separate the frosting in two bowls and add red food color in one bowl, add green food color in the other bowl to have orange and green frosting.

Notes
CAN I MAKE THIS RECIPE IN ADVANCE?Yes, for sure! You can make both the chocolate cake and the frosting in advance.
The single layer chocolate cake can be made up to 2 months in advance when properly stored in the freezer.
The milk chocolate frosting can be made up to 2-3 days in advance when kept in a tightly sealed container in your refrigerator. You might need to place it back into the mixing bowl of your stand mixer to bring it back to life a bit before adding it to your chocolate cake.

HOW TO FREEZE CHOCOLATE CAKE (UNFROSTED)Freezing this single layer chocolate cake requires only a few steps.
Allow the cake to cool completely.Wrap it tightly in 2-3 layers of plastic wrap.Place it in a freezer storage bag then into a flat part of your freezer.
To defrost this chocolate cake, you will want to put it in your refrigerator 2-3 hours before frosting. This will not completely defrost the cake, but this is a good thing! A fully defrosted cake will give you more crumbs as you try to frost it.
CAN I FREEZE FROSTED CAKE SLICES?Absolutely! I used this chocolate cake recipe for my birthday cake and froze the remaining slices to have for later.
To freeze frosted cake slices, tightly wrap each individual cake slice 2-3 times in plastic wrap. Then add one layer of aluminum foil. Gently write on the outside in permanent marker what it is in case you forget.
Once packaged up for the freezer, you can arrange them on a baking sheet, plate, or a flat surface in your freezer. The slices will last up to 2 months.
To defrost the frosted cake slices, let them come to room temperature on your kitchen counter or in the refrigerator.
