Oxtail used to be as underrated as beef trotters but not anymore. Like trotters, oxtail require hours of cooking in order to be tender and delicious.Back in the days Oxtail used to be very cheap but it has now become very pricy because more people are discovering how delicious it is.
The fun thing is that once upon a time oxtail was considered as meat for underprivileged people because of it's cheap price and its long hours of cooking. But now not every underprivileged person can afford buying this meat.
The truth is I also can't afford buying it every month, I only buy it once in a while. Every time I buy it, I enjoy it like it's my last.
I may not share oxtail stew recipe but the reality is it has become my favorite meat, and I have no doubt it will become your favorite too once you try it.

Oxtail Stew Recipe
This Stew is cooked low and slow right on the stove.
Oxtail Stew Ingredients:
For this incredible delicious Oxtail Stew you'll need the following ingredients
Vegetable oil: You can also use olive oil, grape seed or sunflower
Oxtails: Avoid frozen oxtails because you'll need to brown them.
Onion: White or a combination of white and green onion.
Salt and Pepper: Season to taste.
Tomatoes: Tomato Paste is another great option.
INSTRUCTIONS
Sear the oxtails: Heat vegetable oil in a large pan over medium-high heat. Season the oxtails with black Pepper and salt, sear the pepper and salt on all sides until browned. Transfer the oxtails on a plate and set them aside.
Sauté: Add the onion to the pot and cook until softened. Stir in brown onion, then add tomatoes and beef stock cube.
Braise: Add the oxtails back to the pot and boil, Making sure that you add 3 cups of water. Turn the heat to low and cover with a lid. Check on the water level regularly and keep on adding water if need be. Cook for 2 hours.simmer for 40 minutes without a lid.
How Long Does It Take To Cook Oxtail?
Oxtail will cook approximately 2-3 hours on the stove, depending on whether you are cooking it on medium heat, low heat or high heat.
• It will take 45 minutes to 1 hour to cook it in an instant or pressure cooker.
• In a slow cooker, it can cook for up to 10 hours.
Storing Oxtail Stew In The Fridge
Put your oxtail stew in an airtight container and store in the fridge for up to 4 days.
Storing In A Freezer
Store your stew in a freezer for up to 12 months frozen in an airtight container.

Bombay potatoes are a simple fancy snack, they are also great as a side dish and as an appetizer. These are perfectly flavored potatoes, they are seasoned with my favorite seasoning. The good thing about this dish is that you can substitute the ingredients with your favorite ingredients.

How To Make Bombay Potatoes
There are many ways of making / cooking Bombay potatoes. The good thing is that there is no wrong way of cooking Bombay Potatoes.
Bombay Potatoes Ingredients
•Mustard Seed
•Cumin Seeds
•Garlic
•Potatoes: I used Yukon Gold Potatoes
•Cooking Oil
•Chopped Tomatoes
•Fresh Coriander
•Salt & Pepper
Instructions:
1. Wash and cut potatoes. Bring to boil a pot of water. Add potatoes and salt.
2. Boil your potatoes for 15 minutes then drain the water from the potatoes using a colander.
3. On a baking tin add cooking oil, butter, mustard seed ,cumin seed and garlic, Fry on a low medium heat for a few minutes. Add your potatoes on a baking tin and add some chopped tomatoes and fresh coriander. Season with salt and pepper.

- 2Kg oxtail
- 5 tablespoons avocado oil
- 3 medium tomatoes
- 1 onion
- 1 tablespoon salt
- 1 tablespoon black pepper
- 1 Beef stock cube knorr
- 8 Medium potatoes
- ½ Teaspoon salt
- 5 Tablespoons vegetable oil
- 2 Teaspoons black mustard seeds
- 1 teaspoon black pepper
- 2 Teaspoons coriander
- 1 garlic, thinly sliced
- 3 Medium potatoes, chopped
- 1 Teaspoon cumin seed
METHOD
- Sauté: Add the onion to the pot and cook until softened. Stir in brown onion, then add tomatoes and beef stock cube.
- Braise: Add the oxtails to the pot and boil, Making sure that you add 3 cups of water. Turn the heat to low and cover with a lid. Check on the water level regularly and keep on adding water if need be. Cook for 2 hours.simmer for 40 minutes without a lid.
