Chicken Stew Recipe
This hearty chicken stew recipe is made with an entire chicken, the chicken marinates in the refrigerator from morning to evening, producing a perfect chicken marinade stew.
The chicken is made with simple ingredients, it's less spice and absolutely contains zero chilli, making it kids friendly and of course it's kids absolutely favorite
This creamy chickenn stew is perfect for warmer or colder months, it can be served with pap, cornbread, crackers, chapatti or homemade biscuits.
Chicken stew is a meal on it's on. Although I cooked mine without any vegetables apart from onion. You can add a lot of vegetables in your chicken soups, examples of vegetables you can add in your chicken are potatoes, carrots, sweet potatoes, green beans, etc. The chicken and vegetables are simmered in seasoned chicken broth until tender.
A lot of people like to use thighs because they hold up pretty well to the simmering. Others like to use chicken breasts, but I used a whole chicken, the results are the same regardless of whether you use a whole chicken, chicken breasts or chicken thighs.
HOW TO MAKE CHICKEN STEW
I first started by marinating my chicken, chicken pieces are more flavorful when they are marinated. I know marinating takes time but there is nothing better than chicken marinade. It's worth the wait.
How To Marinate A Chicken
Cutting Chicken: Start by placing the chicken on a cutting board, cut the chicken into pieces using a sharp knife.
Making Marinade: In a bowl, mix olive oil, garlic powder, onion powder( also known as brown onion), cayenne and smoke paprika.
Rub the chicken pieces with the mixture until rub is gone. Cover with cling film or plastic wrap over the chicken and refrigerate for 5 hours or overnight.
Preparing Chicken Stew
Grill Chicken: Remove the chicken from the fridge and
Bake it for 20 minutes minutes.
Fry: fry in oil till golden brown. Remove from the oil and set aside.
Tomato Blend: Blend tomatoes, onions and green pepper together.
Paste: Using the oil that you had used to fry chicken pieces, add tomato blend, fry until it thickens, add tomato sauce. Mix bouillon with hot water then mix to the tomato mixture. Add chicken to the tomato mixture and let it simmer for 5 minutes.
