I have a soft spot for tortillas and chapatis, the truth is that I used to find myself interchanging these two terms, I didn't know when my flatbread was a chapati and when it was a tortilla but now I know these terms and I make tortillas when i don't have the time to bake a bread.
The most comforting thing about quesadillas is that they can be baked, fried and microwave. And in this recipe, I'll be frying mine.
To me there isn't much of a difference between fried and baked chicken quesadillas, they all contain cheese so none of these two versions are healthier than the other ( if you know what I mean 🤪) haha.
I have had both baked quesadilla and fried quesadilla but I haven't yet had microwaved quesadilla. You know after making your tortillas and frying your chicken and your vegetables then you mix your chicken vegetable mixture on the tortillas, then add some cheese then microwave your tortillas. Not really different from baking, right? I mean the main reason why you are going to be microwaving or baking your tortillas is because you want everything to be mixed evenly , not really because you want the whole job to be done from scratch.
WHAT IS QUESADILLA?
A quesadilla is a flour tortilla filled with chicken, beef, vegetable and cheese. A quesadilla is cooked on the stove or grilled in the oven til the cheese melts.

Basically making it a cheesy chicken quesadilla
There are so many ways of making stuffed quesadillas and even though this is a chicken stuffed quesadillas, you can use the same recipe to make vegetable and beef quesadillas.

HOW TO MAKE CHICKEN QUESADILLA
Seasoned chicken breast, cooked and mixed with sautéed onion, bell peppers.
This recipe works for any steak including turkey, pork or beef.
BEEF QUESADILLA
Beef quesadilla is made using minced beef ( ground beef) and other fillings like onion, bell peppers and other vegetables like spinach and lettuce.
VEGETABLE QUESADILLA
Also called vegetarian quesadilla. This type of quesadilla is made with vegetable filling of your choice, the vegetable is then mixed with bell peppers, onion, corn etc.
Chicken Breast: Chicken breast are leaner than chicken thighs, I always go for chicken breast, any day, any time. You can still use chicken thighs.
Bell Peppers: Green, red and yellow peppers are always my good combination of bell peppers. But hold on are there other bell peppers apart from green, yellow and red peppers? I only see the named colors 🥺
Garlic and Herb: garlic and herb is a combination of garlic spice and herb spice. I am not sure if this type of spice is available in other countries, but it's made by a south African spice brand and it's found in most spice stores.
Diced Tomato
Onion: Any color of onion will work.
Cheddar Cheese and
Mozzarella Cheese : mozzarella cheese and cheddar cheese are my favorite cheese and I always combine these two unless otherwise.
Serving: Tomato Sauce and Tomato Salsa, tomato salsa is popularly referred to as pico de gallo. I'll explain later about this type of sauce and how to can make it.
The key to a great quesadilla is the seasoning and a some good cheese. I like to use cheddar cheese and mozzarella cheese. Once you have some great filling, either vegetables, chicken, beef or pork plus an addition of good cheese then you'll have a perfect chicken quesadilla.
WHAT TO SERVE WITH QUESADILLAS
I served my homemade chicken quesadillas with tomato sauce and salsa.
I used store bought tomato sauce and homemade salsa.
HOW TO MAKE CHICKEN QUESADILLA
How to make chicken quesadilla easy way.
By the way I used store bought flour tortillas, you can use homemade tortillas.
Season Chicken: Cut two chicken breast into cubes. Season with salt, pepper, garlic and herb and fry using olive oil until golden brown. Add some diced tomato, bell peppers and onion. Lightly fry and place aside.
Filling: Place a flour tortilla on a skillet. Sprinkle cheddar cheese and mozzarella cheese. Add seasoned chicken and spring onion on half of the tortilla.
Fold the other half of the tortilla to cover the filling.
Cook: cook for two minutes on each side.
Cut in three portions and serve warm.
Salsa recipe also called pico de gallo recipe.
There is pico de gallo recipe(salsa) and there is salsa recipe. The ingredients are what determines whether it's a pico de gallo or not, but this is pico de gallo salsa.
Salsa is made with stewed or roasted tomatoes, pico de gallo is made with fresh tomatoes.
Pico de gallo is a Mexican tomato dip / sauce that is served on flatbread or any Mexican meal.
It's sometimes pronounced as fresh sauce or tomato salsa, mainly because it's easier to pronouncee than the Mexican name ( pico de gallo).
Pico De Gallo Ingredients
Tomato
Green pepper
Onion
Cilantro/ coriander and chillies
Salt
Black pepper
Pinch of cumin
Vinegar

How To Make Pico De Gallo
Dice 1 tomato, half green pepper, half an onion, coriander and chilli, sprinkle salt, pepper, a pinch of cumin, half a teaspoon of vinegar and a squeeze of one small lime. Mix and chill until ready to serve.

Chicken Quesadillas
INGREDIENTS
Chicken Quesadillas Filling:
- 2Skinless Boneless Chicken Breast, Cubed
- 1 Flour Tortilla, 70g
- 1 Teaspoon black pepper
- 1 teaspoon garlic and herb
- 1 Diced tomato
- ½ Bell peppers
- ½ Onion
- 2 Tablespoons cheddar cheese
- Spring onion
- ½ Cup tomato sauce
- 1 Cup salsa
- 4 Tablespoons olive oil
Sauce Ingredients:
- 1 Tomato
- ⅓ Green pepper
- ½ Onion
- Coriander and chillies
- ½ Teaspoon black pepper
- Pinch of cumin
- ½ Teaspoon vinegar
METHOD
- Cut two chicken breast into cubes. Season with salt, black pepper, garlic and herb. Fry until golden brown.
- Add diced tomato, bell peppers and onion. Fry and place aside.
- Place tortilla on a skillet. Sprinkle cheddar cheese and mozzarella cheese.
- Add chicken and spring onion on half of the tortilla.
- Fold the other half If the tortilla over the half that has the filling.
- Press it down and cook for 2 minutes on each side.
- Cut into three portions and serve warm.
