Easy Vegetable Macaroni
Vegetable macaroni pasta doesn't have to be complicated with layers of ingredients, an easy vegetable macaroni recipe is cooked with only 2 to 3 ingredients, plus tomatoes and onion, macaroni with veggies is easy to cook yet a crowd pleaser, a picky eaters favorite and a family's go to pasta recipe. Give this vegetable pasta recipe a try and you will see why it's my favorite pasta recipe.

If you are a vegan or a vegetarian then this vegetarian pasta is a must try.
Whenever I try to make any pasta, I always try to add some vegetables to it because it adds some great taste.
This veggie macaroni recipe is kind of a meal on it's own, but you can add a side dish, like garlic herb baked chicken breasts or some oven baked boereowors, in addition, you can add some cheese potato salad, coleslaw salad etc.
This macaroni is cooked with no cheese, but you can add the cheese if you want for a perfect cheese pasta recipe.
This recipe is kids friendly because no spice or chilli is added. If it's going to be an all adult meal then you can add chilli powder, garam masala powder and black pepper.

Ingredients
▢ 250g elbow macaroni
▢ 20g green beans
▢ 4 Carrots
▢ 2 Tomatoes
▢ 1 medium onion
▢ 1 tablespoons of salt
▢ 100ml Olive Oil
Instructions
In a pan, heat 5 cups water and 1 tablespoon of salt. Bring it to a boil.
Add 450g of macaroni. Stir with a fork.
Begin to cook macaroni on medium to medium high heat.
Cook macaroni till they are tender to the bite.
Drain all the water using a colander and keep macaroni aside.
COOKING VEGETABLES
Heat 100ml of olive oil in a pan. Lower the heat. Add finely chopped onion. You can also add 1 teaspoon of minced onion or ginger-garlic paste.
Cover the pan with lid. In between do check when cooking tomatoes.
Cook tomatoes on a low to medium heat till they soften and become pulpy.
Now add clean and cut vegetables. I used carrots and green beans. You can add vegetables like cauliflower, capsicum, baby corn, broccoli, potatoes etc.
Season with salt as per taste and Mix very well.
Pour ½ cup of water and mix.
Cover the pan with lid.
On a medium-low to medium heat simmer till the vegetables are cooked. In between do check and if the water has become less you can add some more water.
Once the vegetables are cooked and tender, add the cooked macaroni.
On a low to medium-low heat simmer for a few more minutes.
Serve macaroni pasta hot or warm. you can top with some grated cheddar or vegetarian parmesan cheese or cream before serving.
Notes
Storage: Store any leftovers in an airtight container. They will last about 3-4 days in the fridge.Substitutes: For best results, follow the recipe as is. However here are some common substitutes that would work well in this recipe.Instead of macaroni pasta, you can use any pasta or make it with gluten-free pasta.

This has inspired me to make a macaroni dish for dinner. It will have lots of veggies but it will also have a bit of ground beef for my meat loving boys!
This looks so good! I am always trying to find different ways to make macaroni a little more different being celiac I cant have regular macaroni and the alternative just isn't the same. This sounds like a way to make it better and still be healthy cant wait to try.
