This recipe is budget-friendly because it's made of easy ingredients that you probably already have in the pantry. I can proudly say creamy mushroom chicken pasta has become a family favorite.

This is my go-to creamy pasta recipe. Everything from the juicy chicken breast all the way to the mushrooms gives this dish so much flavor. This dish makes dinner delightful. Truth is everyone on the table is going to appreciate how amazing this pasta tastes.


What you'll need to make creamy mushroom chicken pasta

Pasta: Use Fettuccine Pasta or any pasta of your choice.Make sure to cook the pasta in salted water.

I used fettuccine pasta by the way.

Chicken Breast: boneless chicken breasts cut into strips or cubes according to your preference. Skinless chicken thighs are also a great choice.

Mushroom: Half a pack of mushrooms.

Garlic Cloves: Finely chopped or you can use freshly minced garlic of dried garlic spice. Do not use garlic if you don't like it. Truth is it's not the center of this recipe.

Onion: Finely chopped.

Yellow pepper: Cut into strips

Red pepper: Cut into strips

Black pepper: Black pepper is also replaceable just like garlic. 

Parmesan Cheese – There is no Italian dish without some parmesan cheese. go for good quality freshly grated parmesan cheese, it will surely make a difference. Avoid using boxed parmesan cheese because it will destroy the taste.

Cheddar cheese: Like I mentioned, parmesan cheese is the center of the recipe. So the rest of the cheese can be omitted if you want. 

Mozzarella cheese: If you are going to use parmesan cheese, cheddar cheese and mozzarella cheese then you'll have to reduce the amount of the cheese compared to if you were only using one type of cheese. You'll see the amount I used as you keep on scrolling down.

Fresh cream: And now the big star of the recipe. Fresh cream gives this mushroom chicken pasta a creamy texture.

Butter: The butter helps cook the garlic and onion and adds to the flavor.

Parsley: Fresh chopped parsley

HOW TO MAKE CREAMY MUSHROOM CHICKEN PASTA

Heat 2 teaspoons of oil in a saucepan or pot over medium-high heat. Add the chicken breast and sear on both sides until golden brown. Remove and set aside.

Add 3 tablespoons of butter to the pot. Fry the onion and garlic until the onion becomes transparent, stirring occasionally. Add red and yellow pepper. Fry for 2 minutes, or until beginning to reduce down.

Add the mushrooms and cook for a further 3 minutes, while stirring occasionally. Then, add fresh milk, salt and pepper, and bring to a gentle simmer. Stir in the parmesan cheese, cheddar and mozzarella cheese until it melts through the sauce.

Remove from heat and allow to sit for 5 minutes to allow the sauce to thicken. 

Boil salted water and add pasta, stir occasionally til the pasta is ready.

Drain the pasta using a colander, open tap water and clean your pasts(i like to do this to avoid the pasta sticking together).

Add pasta and chicken in the sauce and mix.

Garnish with parsley.

Allow the meal to sit for 10-12 minutes before serving. This will allow the pasta to suck in all the sauce.

  • 250g fettuccine pasta
  • 2 Chicken breast
  • ½ Pack of mushrooms
