I have gone for two weeks without using the oven, this is indeed an accomplishment considering the fact that I'm always baking. Lately I've just been cooking my food on the stove or making dessert that don't require baking. This no bake lemon cheesecake is my recent no bake dessert. This cheesecake is the perfect warm weather refreshment treat.


I have come across Cheesecake recipes that require baking. Honestly if I'm going to have a Cheesecake it's definitely going to be no bake, unless if I'm only using the Cheesecake for frosting my red velvet cake.

This is a perfect tart,only that it's in form of a cake. But who don't love tarts?.

INGREDIENTS AND VARIATIONS

For The Base

Plain Sweet Biscuits: I like to use Nuttikrust. If you can't find this variety then you can use any type of plain biscuits such as Eat-Sum-Mo, Tennis etc.

Butter: Melted unsalted butter. I like to go for unsalted butter for this recipe.

For The Filling

• Packet of Jell-O Lemon Gelantin 

• Heavy Cream

• Cream Cheese

• Powdered Icing sugar

• 1 Tablespoon lemon zest

• Vanilla Extract


EQUIPMENTS USED

• Springform Pan

• Food Processor or a Blender

• Large Mixing Bowl

• Electric Mixer

• Microwave

How to make No-Bake Lemon Cheesecake

Instructions:

Prepare The Base

1. Crush the biscuits into crumbs using a blender or a food processor. 

2. Melt butter in a microwave or put the butter in a saucepan and melt on the stove.

3. Put crushed biscuits crumbs in a mixing bowl and pour over the melted butter.

4. Use a spoon to mix melted butter and biscuits crumbs.

5. Put the mixture into the base of a springform pan and place the Pan in the fridge while you prepare the filling.

Prepare The Filling

1.Using a hand mixer beat the cream Cheese on medium speed until smooth.

2. Pour Lemon jell-O gelatin into a cup of hot water and stir well. Set aside to cool.

Pour Jell-O into cream Cheese when it's no longer hot. Stir slowly then increase speed when the mixture is combined.

3. Add lemon zest, heavy cream, powdered icing sugar and vanilla extract beat until smooth.

4. Pour the filling over the bass and place in the fridge over night. If you are in a hurry to eat your cake then it can be in the refrigerator for a minimum of 6 hours.

Storing the cheesecake

Chill the cheesecake over night or a minimum of 6 hours.


Freezing.

Wrap the cheesecake in a plastic wrap and in a layer of foil and freeze for up to a month.
